This recipe comes from the Main Dishes section of the “Taste of Lakewood Village” cookbook published by the Village People Committee. This cookbook is available at the Lakewood Village Town Hall.
Sour cream chicken enchiladas

1 medium onion, chopped
1 to 2 tablespoons butter
3 cups cooked chicken
16 ounces sour cream
1 can of cream of chicken soup
1 can of chicken broth (use soup can to measure broth)
2 cups grated cheese
1 package flour tortillas
Saute onions in butter. Mix cream cheese, stir until melted. Mix in chicken and 1 cup of sour cream. In another pan mix 1 cup sour cream, chicken soup and chicken broth. Stir and heat until smooth.
Roll about 2 heaping tablespoons chicken mixture in tortillas. Place in baking dish. Pour the sauce mixture over the top of the stuffed tortillas, cover with grated cheese. Bake at 350 degrees for 25 minutes or until cheese is melted.
